Pepitas sure do pack a punch for something so little! I love these little seeds, they are a great snack and have a delicious, nutty flavour. They are high in protein and also the amino acid L-Tryptophan which acts as a building block in protein biosynthesis. (Humans needs 10-20 different amino acids from food.) Pepitas are also rich in vitamins E, C and A as well as many minerals.
I often add them to porridge, muesli or salads...but this is the first time I have made a whole snack based on them. Super easy and super tasty, this is a great way to grab an on-the-go protein bite.

These little bundt cakes were a bit of an experiment which turned out pleasantly delicious. The best part was that I totally made this up AND they are pretty healthy little things. I really wanted to try out the flaxseed egg substitute that I had made the day before and I am really pleased with how these came out.
These little ones made it all the way up a rather steep hill to a pretty little lighthouse with amazing views. Unfortunately, the boy and I were too full of chicken salad baguettes to eat them...so they had to trek all the way down again! Don't feel sorry for them though...they weren't forgotten and were just enjoyed with a cup of coffee (before dinner...oops)

You know what I LOVE about winter? Even when I am sick of the cold mornings and yearning for the beach and a sun tan and salt in my hair and sand between my toes and icy poles and....I digress...
The thing I love about winter is Porridge EVERY morning, (yes with a capital 'P'.) I do count myself as a bit of a Porridge Expert and love to create different flavours each day.

I made these delicious Oat bars for this weeks afternoon tea at work. These are yummier than the Oatmeal Cookies I made previously. Also a lot quicker as you just cut them into bars after they are baked.

This is a great little slice, packed full of nutrients. Almonds are full of the good monosaturated fats and rich in Vitamin E for cardiovascular health; Walnuts are high in omega-3 fatty acids; Sunflower seeds are packed full of protein (23g per 100g!) and nearly 90% of the fat content is polysaturated and monosaturated, so the good stuff again. Cacao is just a total superfood, with complete phytonutrients, flavenols and antioxidants - if you are going to eat chocolate, this is the best for you by far.
That said, these aren't particularly low fat because of the nut & seed content; but they are filling you still need some fat content in your day. In moderation A-ok!Delicious & nutritious!

Most Saturday mornings I try and get to the Kings Cross Markets. Located in Fitzroy Gardens next to the Alamein Fountain, they are open every Saturday from 9am til 2pm. Of course as with all markets the earlier you get there the better, especially if you want to get all the good fresh produce!
