DATE, ALMOND & OAT BAR
Sunday, June 28, 2009
I made these delicious Oat bars for this weeks afternoon tea at work. These are yummier than the Oatmeal Cookies I made previously. Also a lot quicker as you just cut them into bars after they are baked.
Date Almond & Oat Bars
Ingredients
2 eggs
1 cup whole oats
1/2 cup chopped dates
1/2 cup chopped almonds
1/2 cup wholewheat plain flour
1/2 cup soft brown sugar
1tsp vanilla essence
Method
Whisk eggs, vanilla essence & sugar until well combined. Stir through oats, dates and almonds until combined. Add flour slowly until the mixture holds together (you may need a little more or less,) the consistency should still be sticky to handle.
Shape onto a flat tray or square/rectangle baking dish and bake for 20mins at 200degree celsius.
Allow to cool and cut into bars or squares. Eat one...or two now...and quickly put the rest away for the week!

Is it really only 1/2 cup flour? I just took mine out of the oven and they look much more oat-y than yours pictured.
-Looking fwd to trying them. :) - August 2, 2013 at 6:24 AM

Sure is Jennifer! Just because they are sliced I think it probably looks less oaty :)
Enjoy! x - August 2, 2013 at 8:45 AM
