ALMOND, WALNUT, OAT & CACAO SLICE

This is a great little slice, packed full of nutrients. Almonds are full of the good monosaturated fats and rich in Vitamin E for cardiovascular health; Walnuts are high in omega-3 fatty acids; Sunflower seeds are packed full of protein (23g per 100g!) and nearly 90% of the fat content is polysaturated and monosaturated, so the good stuff again. Cacao is just a total superfood, with complete phytonutrients, flavenols and antioxidants - if you are going to eat chocolate, this is the best for you by far.
That said, these aren't particularly low fat because of the nut & seed content; but they are filling you still need some fat content in your day. In moderation A-ok!Delicious & nutritious!
Almond Walnut Oat & Cacao Slice
Ingredients
1/3 cup wholemeal flour
1/2 cup oats finely processed (or oat flour)
1/2 cup almonds finely processed (or almond flour)
2 eggs
2 tbsp almond paste
1/2 tsp baking powder
1/3 cup soymilk
2 tsp cinnamon
1 tsp mixed spice
1/2 cup chopped walnuts (and some for decorating the top)
1/4 cup sunflower seeds
1/4 cup cacao nibs
1 tbsp honey
Method
Beat eggs lightly with almond paste, soy milk and honey. Combine wholemeal flour, processed almonds and oats, cinnamon, mixed spice, baking powder, walnuts, sunflower seeds and cacao nibs. Mix wet ingredients through the dry mix until well combined.
Lightly grease (or line with baking paper) a square slice dish and spread mixture to edges. Top with extra walnuts or other nuts if you wish. Bake at 180 degrees celsius for about 15-20mins.
Allow to cool and cut into slices. I've been having this for morning tea - so good!
