ANTIPASTO STYLED PLATTER
Sunday, March 8, 2009I would so rather eat little bits of everything rather than one big meal. So much more satisfying and interesting having a tapas style meal. Lots of different flavours and a more relaxed and slow way of eating too.
This platter was everything I felt like eating for dinner; calamari, scallops, stuffed mushrooms, roast parmesan zucchini and asparagus.
Mushrooms stuffed with feta, sundried tomatoes and fresh basil.
Zucchini with parmesan and sea salt flakes.
The scallops were marinated for about 4 hours in ginger, chilli flakes & basil. The calamari was in milk for a few hours and then just tossed in sea salt, pepper and a bit of lemon juice. Just felt like simple flavours and this really hit the spot. It was also a surprisingly good combination since I really didn't consider it was going to be all together in a meal. Whew!
