How good is this for dessert?! High protein ice cream! I love you vegans for giving me fantastic recipe and food ideas! Super easy to whip up, and you don't even have to freeze it; try it just chilled in the fridge as a mousse...rich and creamy.
I have also made choc strawberry frozen tofu by adding melted dark chocolate and strawberry puree, and am going to be trying many more ideas too. I think most fruits will work well with this. Has anyone tried making tofu ice cream?
Very Nice Cream
4 serves / approx 140 calories per serve
approx macronutrient breakdown: fat 5g, carb 14g, protein 12g
375g high protein firm tofu
2 tbsp organic rice syrup
Stevia liquid to taste
2 tsp vanilla extract
1/2 tsp ground ginger
1 tbsp ground cinnamon
2 tsp ground nutmeg
1/4 fresh organic espresso
Cut tofu in manageable chunks and place in food processor. Process until smooth, scraping down the sides as necessary. Add rice syrup, spices, espresso and vanilla extract and process again until the consistency is be creamy and mousse like.)
Spoon into a container and smooth out, then freeze until firm, then put through the food processor again to get a really smooth consistency. Or just eat it straight away like a mousse!
Allow to soften a little at room temperature to serve.
