HAPPY HUMMUS

Last week I had a few days of eating lots of fresh, raw & clean foods. Plenty of vegetables, fruit and some lean proteins. Just wanted to avoid processed foods...so no breads, pastas, packaged goods etc...

So I whipped up some delicious low fat hummus dip to have with raw carrots, celery, capsicum & cauliflower. I can't think of anything more tasty with vegies! This is great for entertaining too - it's so simple that you will never buy store hummus again.



Happy Hummus
makes approx 1 cup:450g / approx. 30 calories per 30g serve (2 tbsp)
approx. macronutrient breakdown: fat 1g / carbs 4.6g / protein 1.2g


Ingredients
400g can chickpeas, rinsed
60ml fresh lime juice (or the traditional lemon)
2 tbsp tahini
1 tsp cumin
1 tsp paprika
1/2 tsp coriander
1 small garlic clove, crushed
salt & pepper to taste
extra paprika to serve

Method
Place all ingredients in a small food processor and process until a smooth paste occurs. Taste and season as required with salt and pepper then process to combine. If too thick, add a little extra lime juice or even just water.
Serve with an extra sprinkle of paprika - perfect on crusty bread, with fresh carrots, celery and cauliflower! I love this on raw cauliflower!
