ONION JAM

I had totally forgotten about the onions that I had in the Box Fresh delivery from last week. How could I miss those?! There was also plenty of garlic left over (need more ideas for that too!) and chilli and herbs. So I knew that there was going to be more onions coming in the order today, and then I would have 6! Onion jam was the solution.
Ingredients
1 purple onion
1 white onion
1 garlic clove (finely chopped or crushed)
1 red chilli
fresh basil leaves
fresh coriander
balsamic vinegar
1/3 bbq sauce
3 tbsp brown sugar
sea salt flakes
pepper
Method
In a fry pan, heat oil and add finely chopped garlic, chilli, herbs and cook for a few minutes. Throw in sliced onions and cook until softened. Once the mixture has is browned a little, add the bbq sauce, balsamic, brown sugar, salt and pepper. Allow the onion to cook right through until the sauce caramelises deliciously! (Low heat for about 20 mins or so.) Keep in a jar in the fridge. Am planning on having on toast on Sunday, yum!
