LEMON CURD & CHOCOLATE TART
Tuesday, March 17, 2009I made Lemon Curd earlier this week with some leftover egg yolks; but decided to use it for a lemon tart since my parents were up on the weekend. This tart was such a beautiful mix of flavours - you really can't go past the citrus and chocolate combination. We took it on the Sunday picnic at Palm Beach and it travelled very well in the esky with some ice blocks.
The recipe was kinda just made up honestly...but you can use any shortcrust pastry for the base; I actually made mine with good hot chocolate not cocoa! Just used less sugar and it was very tasty.
The filling was simply lemon (and lime) curd combined with light cream and gelatine and set in the fridge for a few hours. Easy. But I think the homemade curd makes a big difference to the flavour - I like quite a tart lemon taste and the (hot) chocolate base complements this perfectly in sweetness.
Lemon curd combined through with light cream (you could use double cream if you like,) and a bit of gelatine powder. A beautiful warm creamy colour.
Hot chocolate tart base, came out nice and dark in colour which I like against the filling.
